And the chocolate celebrations continue this summer!!! Today is National Chocolate Pudding Day! Here is a quick, creamy recipe for you to try:

Ingredients: 
2/3 cup sugar
1/4 cup Mozna Chocolate Cocoa or Mozna Chocolate melted chocolate
3 tablespoons cornstarch
1/4 teaspoon salt
2-1/4 cups milk
2 tablespoons butter or margarine
1 teaspoon vanilla extract
Whipped topping (optional)

Directions:
1. Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk.
2. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Garnish with whipped topping, if desired. 4 servings.

MICROWAVE DIRECTIONS:
1. Stir together sugar, cocoa, cornstarch and salt in large microwave-safe bowl; gradually stir in milk.
2. Microwave at HIGH (100%) 7 to 10 minutes or until mixture comes to full boil, stirring every

La #pralineriaastrati è tra i miei argomenti preferiti.

Perché inserire dieci piani di sapori diversi in una fetta di torta è semplice. L'aroma che ti è sfuggito nella prima cucchiaiata, lo ritrovi nella seconda. Si hanno 80-100 grammi di prodotto a disposizione per poter capire cosa c'è dentro.

In una pralina i grammi diventano 10, in media. E un 20% è occupato dalla camicia di cioccolato. 
Vuol dire che rimangono solo 8 grammi a disposizione per i ripieni.

OTTO GRAMMI.

Si hanno otto grammi per poter inserire strati di #sapore diverso e #texture diversa.
Otto grammi in cui rendere perfettamente armoniosa, equilibrata e unica l'esperienza sensoriale del degustatore. 
Otto grammi in cui non sono concessi errori, margini di rischio o seconde possibilità.

Deve essere "buona la prima!". E quel lavoro di accostamento, prove e ricerca per rendere queste piccole opere d'arte perfette per l'#assaggio, dura un tempo indefinito. I tentativi che si fanno sono tutto fuorché ben bilanciati al primo giro.

Bean-to-bar - это шоколад, изготовленный от и до в одном месте. От боба к плитке. Производитель выбирает и покупает бобы и другие ингредиенты, обжаривает, измельчает и т.д.
Мы дегустировали 9 разных плиток российского производства от @fresh_cacao, @amazingcacao, @vento_d_oro, @marussia_chocolate.
Мои фавориты:
❤️ @eywachocolate Индия Керала 70%, с фруктовой кислинкой
🖤 @byverhoff Боливия 70%, терпкий, ореховый

Шоколад этот дорогой, для ценителей. Не на каждый день, я бы сказала. Но у некоторых производителей упаковка сильно не дотягивает до цены или шоколада, что большая маркетинговая ошибка🙄🤷🏻‍♀️

Man hat mir diese Tafel schon öfter empfohlen, das wurde mal Zeit sie zu probieren. Chocolat Bonnat hat eine richtig gute 100%.
Kräftig, komplex und durchgehend sehr schokoladig. Schmeckt vom ersten Moment an nach Erdnüssen, was auch anhält und die Tafel schön auflockert. Sie ist sonst nämlich wirklich tiefschwarz im Geschmack und sehr schwer. Schmilzt auch sehr zäh, obwohl sie an sich sehr cremig ist.
Mir gefallen die farbenfrohem Aromen, die sie hat... das ging von Erdnüssen, sonstigen gerösteten Nüssen zu Kokosnuss, Stachelbeeren und weißen Johannisbeeren die aufauchen; und auch eine freundliche Süße und Sahnigkeit sind noch darin zu finden. Aber allgemein natürlich dunkel und bitter, davon geht wahrscheinlich nicht die ganze Tafel auf einmal ;) Würde ich aber für Leute, die den ganz hochprozentigen Bereich mögen, sehr empfehlen.

プレオープンから連日完売となり、はやくも人気を頂戴しているチョコレートウィッチを楽しむポイントをご紹介します。

①主役は軽やかで自然な甘みの「チョコレートクリーム」 .
チョコレート・甘酒・米油でお作りした口どけが良いチョコレートクリームは、香り高いカカオ豆の長い余韻をお楽しみいただけます。

発酵食品の甘酒によりカカオ由来の甘みがすっきりと引き立ち、カカオの発酵感や香りによる満足感のあるクリームが完成しました。

②クリームを引き立てる「ビスケット」と「チョコレート」
.
一番外側の2枚のビスケットと、中央に挟んだ板チョコレートは、チョコレートクリームをより美味しく味わっていただくために、風味や輪郭を添える役割です。

香ばしさやボディ感を加えていますが、チョコレートは薄く伸ばし、ビスケットもしっとりと薄く焼き上げることで、チョコレートクリームを最も美味しく 味わうためのベストバランスに辿り着きました。

③ミリ単位で設計したスティック形状
.
今回この形状については最もこだわりました。世の中にはなかなかチョコレートウィッチに類似した商品がなく、チョコレートクリームを美味しく味わえる形状を何度も試行錯誤しました。

当初は今の形状よりも大きなサイズでの販売を検討しましたが、サイズが数mm異なるだけで全く味わいの違うものとなり、クリームが重たく感じたり、香りを感じとりにくくなるという問題がありました。
.
そこで縦・横・厚さを5mm 単位と細かく変更することで、口に運んだ瞬間にチョコレートクリームの味わいとカカオの香りが広がるベストなバランスを見つけることができました。

But is white chocolate actually real chocolate? 
In order to qualify as chocolate, a product must contain cocoa solids. And white chocolate does no such thing. Instead, it’s usually made from a combination of cocoa butter, lecithin (a fatty emulsifier), milk products, sugar, and vanilla.

Cacao butter is the fat extracted from the cacao beans. The cacao butter used in all Original Beans chocolates stems from organic Trinitario beans from CONACADO, an organization of smallholder cacao farmers from the Dominican Republic. Usually cacao butter is filtered and deodorized to get a neutral, standardized product. CONACADO’s cacao butter is different: It is warmly roasted and then pressed unfiltered. Thus, it fits perfectly to Original Beans’ philosophy of preserving distinct aromas.

The cacao butter used in all Original Beans chocolates stems from organic Trinitario beans from CONACADO, an organization of smallholder cacao farmers from the Dominican Republic. Usually cacao butter is filtered and deodorized to get a neutral, standardized product. CONACADO’s cacao butter is different: It is warmly roasted and then pressed unfiltered. Thus, it fits perfectly to Original Beans’ philosophy of preserving distinct aromas.

🚫Опрос в сториз показал, что почти половина грызет шоколад.

С точки зрения нашего мозга – это логично. Он любит пищу, богатую глюкозой, и хочет побыстрее получить свои калории.

Но увы, так мы упускаем большую часть вкуса шоколада, так как какао-масло не успевает таять и отдавать свой аромат, и мы чувствуем только сладость сахара‼️ Из-за этого зачастую не понятна разница между фабричным шоколадом и качественным bean-to-bar, про который я постоянно пишу.

☺️Поэтому я хочу предложить вам 5️⃣ правил, как научиться наслаждаться шоколадом:

🔻 Отвлекитесь от мыслей о делах и задачах. Не думайте о том, какой вкус шоколада вы ожидаете. Наш мозг любит придумывать себе паттерны, что вкусно, что не вкусно. Поэтому важно не ожидать ничего и быть открытым к новому во время дегустации.

🔻Расслабьтесь. Пусть дегустация шоколада будет вашей маленькой медитацией, когда вы сосредоточитесь на своих ощущениях, а не на том, что вам нужно сделать или о каких-то проблемах.

🔻Оцените зрительно плитку, насладитесь блестящей поверхностью, красивым цветом, понюхайте и отломите дольку, услышав характерный звук. Вид продукта влияет на вкус также как и окружающая обстановка и даже стоимость. Удивительно, но это доказаный факт.

🔻Поместите кусочек шоколада в рот. Можно пару раз раскусить его, если размер большой, но не грызите. Под воздействием температуры тела, какао-масло начнет таять во рту, и вы почувствуете флейвор (мне больше нравится это слово, т.к. это значит и вкус и аромат, а в русском языке аналога нет).

🔻Прислушайте к ощущениям, что вы чувствуете? Есть ли кислинка, сладость, горечь? Какая текстура у шоколада? Кремовая, или более плотная, крупинчатая? Меняется ли вкус шоколада? Вам не нужно выделять никакие ноты, просто нужно задуматься о вкусе того, что вы едите, и своих ощущениях. Сосредоточтесь на них.

👉У меня к вам маленькое задание. Купите себе шоколад🍫, пусть даже не бинтубар, и устройте себе вечером релакс, отпустив мысли о делах, проблемах и других заботах, просто насладитесь шоколадом.
